Fish Soup/ Fish Porridge


Ingredients:

Batam Fish (thin slice)
Sole fish 3 pcs (break into few pcs)
1 handful of ikan bilis
2 tbs dried soy bean
4 cup water
pepper
fish sauce
1 tsp tang choy (冬菜)

2 garlic (slice/ chopped)
1 tsp oil (or just enough to cover the garlic)


Method (2 servings):
  1. Soak sliced fish in salt water (1tsp salt + water + 1tsp corn flour) for 20mins.
  2. Boil ikan bilis,  soy bean and water, when boiled lower heat and simmer for 30mins.
  3. Put garlic and oil in a small ceramic cup, heat up in microwave for 2m (this will be based on individual microwave). The garlic will turn slight brown, add in sole fish, stir and mix together with garlic and heat up another 30s.
  4. Drain out the ikan bilis broth, and boil the broth in another pot.
  5. Drain out the water in the fish and add it into the pot.
  6. Cook for 2-3mins. add in pepper and fish sauce if desired
  7. Turn off the heat.
  8. Pour out the soup in 2 bowls, add in tong choy, sole fish and garlic and serve.
If for fish porridge, pour the soup on to rice and serve.

Deep fried Silver Bait Fish



Ingredients:

Silver fish
black pepper
salt
garlic powder
chilli powder

Marinate above for 15-20mins

2 tbs rice flour
2 tsp tapioca flour (optional)

Mix the flour with the silver fish and sift out the excess flour.

Method:
  1. Heat up the oil 
  2. Put in the silver fish and deep fried for 3-4mins.
*Timing may varies, depends on the heat, and amount of fish.

Bread Fried Fish with rice



Ingredients:
Lemon, sliced
3 packet of butter cracker (I use Julie's)
1 egg, beaten
2 dory fillet
2 tsp garlic salt


Tartar sauce ingredients:
1 sliced lemon
Small yellow onion, half, chopped
1tbs mayonnaise
salt 
pepper

Method (yields 2):
  1. Wash dory fillet, tap dry with ktichen towel.
  2. Marinate with garlic salt for 10mins.
  3. Pound butter cracker into small piece.
  4. Dip fillet into egg then dip into the butter cracker.
  5. Deep fried and dish up.
Method:
  1. Place onion into a cup and microwave for 30seconds.
  2. Add all other ingredients and mixed together.
 Served with rice. White rice recipe here.

Hong Kong Style Steamed Fish

Ingredients:
3 slice ginger
5 spring onion (cut into halves)
1.5 tbs hot garlic oil or hot cooking oil
2 tbs good quality light soy sauce + 2 tbs hot water
(I use the premium range from Kuang Woh Hing)

Method: 
  1. Peel the green end of the spring onion and soak into a bowl of water. It will naturally curl up.
  2. Place the white part of spring onion on plate, then place the fish on top.
  3. Slot 2 ginger slice inside the stomach and 1 slice inside the gills.
  4.  Turn on high heat and bring the water to boil in the wok. 
  5. When boil, place the plate into the wok and steam for 8min (my grouper is about 600g, timing varies on the size of the fish).
  6. Pour away the water in the plate, remove the spring onion (white part).
  7. Put the spring onion (green part) on top of fish, pour hot oil on top of the spring onion and fish.
  8. Then pour the light soy sauce mixture over and served.

Sweet Mustard Grilled Salmon

Ingredients:
Salmon fillet
1 tbs honey mustard
2 tbs brown sugar
Garlic salt and pepper
 
 
Method:
  1. Marinade salmon fillet with garlic salt and pepper for 10mins.
  2. Spread over honey mustard and sugar on the salmon fillet.
  3. Broiled it for 15mins.

Fish Meat Bee Hoon Soup

Ingredients (serve 1):
2-3 tbs evaporated milk
1 tbs Chinese wine (hua diao)
1-2 stalk Chye Sim (cut into 4cm long)
Fish fillet (grouper, red snapper) cut into big cubes and marinate with little salt for 10mins.
1 small Shallot (sliced), place in cup, covered by oil, microwave high for 2m30s
2 cup Chicken broth 
1 portion of Laksa noodle
1 small piece of sole fish (microwave high for 30sec)
fish sauce to taste
 
 
Method:
  1. Heat up wok and fill with oil, turn to big flame.
  2. When oil is hot, fry the fish fillet till golden brown.
  3. Boil chicken broth.
  4. Add in chye sim, sole fish, evaporated milk.
  5. Add in laksa noodle, fish sauce.
  6. Add in Chinese wine, fish fillet, let it boil for 2 mins.
  7. When done, top with shallots, ikan billis (optional).

Grilled Dory fish

Ingredients:
1 dory fish
1/2 tsp dash chilli powder/ paprika
Lee perin sauce
Black pepper
1/2 tsp oregano
Basil leaves
2 tbs cheddar cheese
 
Method:
  1. Apply on fish for 5 mins.
  2. Preheat up oven 180 degree.
  3. Grilled for 15mins
Salad:
  1. Sliced cabbage thinly and keep in freezer for 10-15mins (I like to eat very cold salad)
  2. Pour on some mayonnaise on it and serve.
